I had a circa-80 electric coil one as a kid and yeah, it bothered me that you’d turn the knob and uh, resistance? would change that meant eventually the coil would get hotter, which would make the pan hotter which would make the food hotter
And with gas it’s like no now you’re immediately applying more heat to the pan
But with induction you’re generating heat in the metal of the pan, so when you turn it up you’re pretty directly applying more heat to the food
As someone who will in fact buy a new stove in the next few years, I’m glad I waded through the performative disdain for people doing things the normal way to realize that their alternative was in fact simply better on the dimensions I value!
