Donut shops were traditionally some of the most likely businesses to be open very early/late or even 24hr/day. A place that could offer food and coffee and a bathroom and human contact no matter when you were on shift was a useful resource; in the other direction a cash business open late is vulnerable to holdups and a reputation that cops might drop by at any time helps. It’s symbiosis.
