And in the last decade or so there has been a kind of kitchen buildup among the rich, filtering from say the 0.1% to the 1% to the 10%. That’s the Viking ranges and powerful fume hoods, the powerful in-wall ovens, the brushed steel professional-grade stuff.

But as originally, for the richest of the rich they had professional kitchens for use by professionals \u2013 staff cooks or catering teams who would use it for events. Whereas as it filters down not so much.
