They handled Temple sacrifices and stuff like that. With the Temple destroyed and its rituals deprecated in successor forms of Judaism they\u2019ve become less central (it\u2019s not a requirement to become a rabbi, for one) but the surname \u201cCohen\u201d is a residue of this.<br/></p>"}
