The kohanim (which is basically just the Hebrew way to say “the Cohens”) were the hereditary Jewish priesthood that traced their ancestry to the biblical Aaron. They handled Temple sacrifices and stuff like that. With the Temple destroyed and its rituals deprecated in successor forms of Judaism they’ve become less central (it’s not a requirement to become a rabbi, for one) but the surname “Cohen” is a residue of this.
